Sweet & Spiced Chickpea Curry with Coconut Elixir Swirl

Why it works:

Ingredients (serves 2):

  • 1 tbsp coconut oil
  • 1/2 onion, diced
  • 1 garlic clove, minced
  • 1 tsp grated ginger
  • 1/2 tsp cinnamon
  • 1/2 tsp cumin
  • 1 can chickpeas, drained
  • 200ml coconut milk
  • 1 scoop eudae Enhance Elixir
  • 1 handful chopped coriander
  • Juice of 1/2 lime

Instructions:

  1. Sauté onion, garlic, and ginger. Add spices and chickpeas.
  2. Stir in coconut milk and simmer 10–15 mins.
  3. Turn off heat and stir in eudae + lime juice.
  4. Serve with brown rice or quinoa.
